Ingredients and process
For the crumb layer, I choose to make my own homemade crumbs. It is very simple to make but if you prefer a shortcut, you can always use any crushed cookies that you like.
When whipping mascarpone cream cheese, it is important to use the mascarpone at room temperature in order to avoid lumpy whip. On the other hand, the heavy cream needs to be cool so keep it in the fridge until using.
When summer is coming, there are fresh cherries everywhere and I just love to add their look and taste on almost every dessert I make. These crumb cheesecakes can also be yummy without them too but I could not resist the urge to decorate with them again! 🙂
The cups I used are small so I ended up with 12 individual desserts, you can use any cups that you want but the bigger the cup, the less desserts. You can also make one big cake if you want, just put it in the freezer for a few hours so it will firm up and be easy to cut into nice pieces.

Tips to ensure your Easy Mini Crumb Cheesecakes turn out perfectly:
Cold Butter for Crumbs
Make sure the butter is cold when mixing with the flour and sugar. This helps create a crumbly texture for the base.
Even Crumb Distribution
When baking the crumbs, spread them evenly on the baking paper to ensure they cook uniformly and don’t burn.
Cooling the Crumbs
Allow the crumbs to cool completely before assembling the cheesecakes. This prevents the cream layer from melting and helps maintain the structure.
Firm Whip
Whip the cream cheese mixture until it forms firm peaks. This ensures the cheesecake layer is stable and holds its shape in the cups.
Layering
For a neater presentation, use a piping bag to layer the cheesecake mixture. This gives you more control and creates even layers.
Fruit Garnish
Choose fresh, seasonal fruit for decoration. It adds a burst of flavor and a beautiful finish to your mini cheesecakes.
Chill Before Serving
Chill the assembled mini cheesecakes in the refrigerator for at least an hour before serving. This allows the flavors to meld and the texture to firm up.
