November has arrived and the weather is perfect! Although some would disagree, I love this weather the most. I mean, it’s not so hot anymore and it’s all about comfort food. Diets and healthy habits kind of go out the window, haha! That’s why I’m also sharing a healthy breakfast recipe to start off the month! Let’s make a deal and try to stay on track! Pumpkin is still in everything and I have incorporated it in my healthy and delicious breakfast recipe.

A smoothie bowl is a great way to start the day, it energizes you and keeps you full. I already shared a smoothie bowl recipe on my blog- green smoothie bowl which is made with spinach and avocado. This time, however, I wanted to try different flavors and colors that fit the fall season.

The recipe is very quick and easy, simply blend the ingredients, garnish and dig in. One thing to prepare ahead is a frozen banana. You can use a fresh banana too but when it is frozen, it gives a different texture to the smoothie and helps thicken it a bit. I like to keep peeled frozen bananas in the freezer all the time so I can have my smoothie whenever I want. You can also place the banana in the freezer the night before you are going to make this smoothie.

The recipe can be vegan if you use soy / almond/ rice milk. I used regular milk but any type will work here.

Pumpkin Smoothie Bowl Recipe

To garnish the smoothie, I added green apple slices, flax seeds, chia seeds and pumpkin seeds. The green apple gives a tart flavor that balances the sweet smoothie. The seeds add more nutritional benefits and texture. The only sweetener in this recipe is maple syrup, I used 2 tablespoons, but you can add less or more by your taste.

Another option for garnish or added texture can be to mix in homemade granola that will turn the smoothie to be even more filling because of the oatmeal.

Here is the recipe for this easy and delicious pumpkin smoothie bowl:

Ingredients:

  • 1/2 cup milk
  • 1/2 cup pumpkin puree
  • 1 frozen banana
  • 1 teaspoon homemade pumpkin spice
  • 2 tablespoons maple syrup

For the garnish:

  • 1 green apple cut
  • 1 tablespoon chia seeds
  • 1 tablespoon pumpkin seeds
  • 1 tablespoon flax seeds

Pumpkin Spice Smoothie Bowl

Preparation:

  1. In a food processor, place all ingredients and blend to a smooth batter.
  2. Move the batter to a bowl.
  3. Garnish with the apple and seeds.
  4. Enjoy!
