    The Jewish holiday of Passover is coming up usually at March or April and it has a traditional food habit, one that some might find difficult to follow! Jews will avoid eating bread for the whole holiday (eight days) to symbolize the Jews running away from Egypt. In the process of leaving Egypt, they didn’t have time to let the dough rise - therefore, they wound up baking something completely different, Matza, a thin hard flat bread. It was Matza that the Jews ate as they walked in the desert from Egypt to Israel.

    After a few days of having only Matza, it can get boring! Really boring. That's why I am happy to share with you an idea for kosher rolls or popovers that fit Passover and taste delicious. To make the rolls I use matzo meal (a flour that is made especially of Matzah bread and is not a fine powder). These rolls are great for breakfast, dinner or even with soup at lunch.

    I actually got the recipe from my mom who used to make them every Passover until I took over and started baking them myself – now it's my job to make these Passover rolls when the holiday comes round.

    The recipe yields approximately 12 rolls, if you have guests then it might be best to double the ingredients.

    Helpful tips to ensure your Passover rolls turn out perfectly:

    Measure Ingredients Accurately

    It's crucial to measure your ingredients accurately, especially when working with baking recipes. Use measuring cups and spoons to ensure precision.

    Mix Thoroughly

    When adding the matzo meal and eggs to the batter, make sure to mix them well until a smooth dough forms. This ensures that the rolls have a consistent texture.

    Let the Batter Cool

    Allowing the batter to cool at room temperature for 15 minutes helps it firm up slightly, making it easier to handle and shape into rolls.

    Use Wet Hands for Shaping

    Wet your hands before shaping the dough into balls. This prevents the dough from sticking to your hands and helps create smooth, uniform rolls.

    Brush with Olive Oil

    Brushing each roll with olive oil before baking adds flavor and helps them develop a golden crust while baking.

    Watch the Baking Time

     Keep an eye on the rolls as they bake. Depending on your oven, they may be ready slightly earlier or later than the specified 40 minutes. Look for a golden brown color and a slightly firm texture to indicate they're done.

    Cool Completely

    Allow the rolls to cool completely at room temperature before serving. This allows the flavors to develop fully and ensures a better texture.

    Can I substitute matzo meal with something else?

    Matzo meal is a key ingredient in Passover rolls, providing the unique texture and flavor. However, if you're unable to find matzo meal, you can try using finely ground matzo as a substitute.

    Can I make these rolls ahead of time?

    Yes, you can make the rolls ahead of time. Once baked, allow them to cool completely, then store them in an airtight container at room temperature for up to 2 days. Before serving, you can reheat them in a preheated oven for a few minutes to freshen them up.

    Can I freeze these rolls?

    Yes, you can freeze the rolls for longer storage. After baking and cooling, place the rolls in a freezer-safe container or zip-top bag, separating them with parchment paper to prevent sticking. They can be frozen for up to 1 month. To reheat, allow them to thaw at room temperature, then warm them in a preheated oven until heated through.

    Can I make larger or smaller rolls?

    Yes, you can adjust the size of the rolls to your preference. For larger rolls, divide the dough into fewer portions, and for smaller rolls, divide the dough into more portions. Just keep in mind that baking time may need to be adjusted accordingly.

    Passover Rolls Easy Recipe

    Ingredients
      

    • 2½ cups water
    • ½ cup olive oil
    • 1 teaspoon salt
    • 2 cups matzo meal
    • 2 eggs
    • 2 tablespoon olive oil- for brushing the rolls

    Instructions
     

    • In a pot, cook on high the water, salt and oil until they boil hard.
    • Remove the pot from the stove and add the matzo meal, mix well until dough is created.
    • Let the batter cool at room temperature for 15 minutes.
    • Heat the oven to 180°C / 350°F fan.
    • Add the eggs to the batter one at a time and mix well.
    • Create small balls with wet hands and place on a baking pan with baking paper.
    • Brush each roll with olive oil.
    • Bake for 40 minutes.
    • Cool at room temperature.
    • Have a delicious roll and happy Passover!
